Eating seasonally is something we should all strive towards, even during the festive season where the temptation to over-indulge is great. Turkey, cranberries, chestnuts and sprouts are, thankfully, seasonal foods, but if you’re not a fan of those then December offers a wealth of other delicious produce for you to choose from.
We think one of the highlights of the winter season is game, and this month wild duck is very much on the menu. Wild duck can be absolutely delicious when cooked correctly, but if you have concerns it’s best to consult your butcher or game dealer first – when it goes wrong it goes very wrong!
Duck, whether wild or otherwise, is a beautifully rich, delicious meat and perfect for a special occasion. If you can’t stand the thought of eating turkey on Christmas Day duck can provide a wonderfully tasty alternative. Check out this recipe from James Martin as an example, which combines roast duck with seasonal cranberries, apples, cabbage and clementines, as well as Chinese five spice for depth of flavour. Celeriac, another seasonal food, can also be added as a side dish – it’s wonderful when baked and you can also add in other seasonal veg such as parsnip.
This Christmas roast duck recipe can be accompanied by our stunning new wine, the Vranec Syrah Petit Verdot. This blend of three diverse grapes, two of which are local to Macedonia, makes for a full bodied wine with rich plum and blueberry flavours. Delivering a memorably long, spicy finish, this wine is the perfect complement to the complex flavours in the duck.
