Push the boat out this summer with a lobster curry and a glass of Stobi Muscat Ottonel

With the heat having been turned up to roasting temperatures it can be difficult to find tasty summer recipes that are light and easy to make – after all, no-one wants to be slaving over a hot stove for hours in this weather!
If you’re sick of salads, we think we’ve found the perfect recipe to inspire you: James Martin’s lobster Thai green curry. Summer is a great time to eat lobster as this is the season when they become more active, meaning that they’re easier to catch and much more plentiful. They’re also a great seaside flavour, making you feel like you’re relaxing beside the glistening water even if you’ve just come back from a long day at work.
Although it sounds extravagant, and this is certainly a dish that will impress at a dinner party, you don’t have to use fresh lobsters to make this curry work. Frozen lobsters or lobster pieces (look for tails, for example) also work well and can even be found at discount supermarkets such as Lidl.
